Catholic Recipe: Christmas Dessert: Rabanadas

  • 2 loaves French bread
  • 12 eggs, beaten

This is a Portuguese/Brazilian "French" Toast served as a dessert anytime, not just breakfast.

DIRECTIONS

Combine milk, honey, cinnamon sticks, lemon rind, sugar, salt in a deep saucepan. Simmer 1 hour, stirring occasionally. Remove from heat. Cut bread in half-inch slices. Dip 1 slice at a time into mixture, lightly coating each slice. Dip slices into beaten eggs. Fry in oil until light brown. Serve on platter; sprinkle freely with cinnamon sugar. Serve cold.
