Catholic Recipe: Petits Fours

INGREDIENTS

  • 1/3 cup soft shortening
  • 1 cup extra fine (instant) sugar
  • 1-1/3 cups sifted cake flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 3 egg whites
  • raspberry jam
  • Coffee Glaze (see recipe)

Petits Fours are small cakes, individually frosted. These make a perfect finger food for parties or buffets.

DIRECTIONS

Cream shortening and sugar. Mix and sift flour, baking powder, and salt; add alternately with milk to creamed mixture; add vanilla. Beat egg whites stiff but not dry; fold in. Bake in greased and floured 9-inch square cake pan at 375° for about 30 minutes. Cool on cake rack. Cut in fancy shapes. Split each piece; put together with raspberry jam. Spoon Coffee Glaze (see recipe) over cakes, letting it run down sides. When glaze is firm, decorate as desired.
