Catholic Recipe: Mock Turtle Soup - 2
Here is a variation for those who don't have or would rather not use a calf's head to make this soup.
DIRECTIONS
Brown ground beef; combine with next 6 ingredients. In a blender or food processor puree the carrot, celery, lemons and onions with 2 quarts water; add wine and vegetable mixture to beef mixture. Simmer 1 hour. Add 3 chopped hard- boiled eggs and break ginger snaps into mixture. Simmer another 1 1/2 hours. Hearty, robust and filling!
