Catholic Recipe: Potted Cod with Sour Cream
Also Called: Stockfisch in Sabne
DIRECTIONS
Soak cod 4 hours in water to cover; drain. Cover with fresh water. Simmer in saucepan until tender. Remove bones, skin. Cut fish into generous pieces; salt lightly. Brown 2 tablespoons butter; pour over fish.
Place herring, onion, parsley in 2 tablespoons butter. Sauté.
Grease baking dish. Make layer of cod, layer of potatoes, layer of herring until all ingredients are utilized, ending with layer of potatoes; salt each layer lightly. Pour sour cream on top. Dot with remaining butter. Bake 20 minutes at 375°.
